For a long time, baking has been a wonderful creative outlet for me. When I found out that I could have a career doing something that I loved, I quickly became enamored by the culture of the food industry. Through pastry, I’ve learned what my potential is and thankfully my experience at the Ecole Nationale Superieure de Patisserie (ENSP) school in Yssingeaux, France has furthered my potential. In just 3 months, I’ve gained an entirely new perspective to pastry and have learned heaps of information about the field, French Culture and about myself. This program has instilled more confidence in my ability to become a professional pastry chef whilst letting me truly discover new things about myself. I’d like to extend the deepest of thank yous to the Ashley Soulé Conroy Scholarship Foundation. Thank you again for giving me the opportunity to practice pastry in the best place in the world to do it! Je vous remercie de tout cœur. (I thank you from the bottom of my heart.)
